As of last week, Steve is now part-owner of Rickenbacker’s, an award-winning restaurant located near the Ogden Airport.

We will be busy making some changes to the restaurant over the next few months. There will be a new logo, a new menu, and a new look to the place.

Rickenbacker’s has been open for about three years, but is kind of tucked away and has remained mostly undiscovered. Go check out the incredible mountain views for yourself. (The lunch menu is very affordable.)

Have more pumpkins than you can carve? Turn one of them into Pumpkin Soup, as shown in our most recent cooking class. Here’s the recipe:

1 whole large pumpkin

1 yellow onion, peeled and sliced

2 Tbsp. oil

1 quart chicken stock

1 tsp. kosher salt

1 tsp. cumin

1 tsp. granulated garlic

1 tsp. paprika

1 cup heavy cream

1 stick of butter

Peel pumpkin and cut into long strips. Cut up onions and toss with the vegetable oil. Roast pumpkin and onions in oven at 375 degrees, or until well browned. Remove from oven and put into pot. Add the chicken stock and spices. Simmer together until the pumpkin and onions are soft, about 1 hour. Puree the soup in a blender, then put back on the heat and add cream and butter. Simmer another 15 minutes.

Top with toasted pepitas (pumpkin seeds), fresh cilantro, and sour cream.

We’ve created the perfect soup, just in time for Fall.

Creamy tomato soup with cheese, rice, and crunchy tortilla strips. Only $5.95 per bowl.

We’ve received a few emails informing us that something is wrong with our blog and it is not allowing any comments. It’s strange, since the spammers from Switzerland have still figured out a way to get their comments to go through.

We are big fans of hearing from our customers, so we will get things fixed soon. In fact, we’ll be making quite a few changes to our website over the next month. Stay tuned. Any feel free to email us any comments or post them on our Facebook page.
